Cheesy Potato Skillet Recipe
Ingredients
4 medium potatoes (russet or Yukon Gold), peeled and diced
1 cup shredded cheddar cheese (or cheese of your choice)
1 small onion, diced
1 bell pepper (any color), diced
2 cloves garlic, minced
2 tbsp olive oil
1 tsp paprika
½ tsp garlic powder
½ tsp onion powder
Salt and black pepper to taste
2-3 green onions, chopped (for garnish, optional)
Fresh parsley or cilantro (for garnish, optional)
Instructions:
Preheat the Skillet: Heat the olive oil in a large skillet over medium heat.
Cook the Potatoes: Add the diced potatoes to the skillet. Cook, stirring occasionally, until they start to turn golden and become tender, about 15-20 minutes. If you want them to cook faster, you can cover the skillet with a lid for a few minutes.
Add Vegetables: Add the diced onion and bell pepper to the skillet. Cook for an additional 5 minutes, or until the vegetables are softened.
Season and Add Garlic: Stir in the minced garlic, paprika, garlic powder, onion powder, salt, and black pepper. Cook for another minute or until the garlic is fragrant.
Add Cheese: Sprinkle the shredded cheese evenly over the potato mixture. Reduce the heat to low, cover the skillet with a lid, and let it cook for a few minutes until the cheese is melted and bubbly.
Garnish and Serve: Remove the skillet from heat. Garnish with chopped green onions and fresh parsley or cilantro if desired. Serve hot.
Tips:
For extra flavor, you can add cooked bacon bits, crumbled sausage, or any other toppings you like.
If you prefer a crispier texture, you can spread the potatoes out in the skillet and let them sit without stirring for a few minutes to develop a crispy crust.
