Rice balls stuffed with ground beef
Ingredients for the ‘dough’:
2 cups of washed rice
3 eggs
5 tablespoons of melted butter/margarine
1 teaspoon of salt
4 cups of hot water
Ingredients for the filling:
400 g of ground beef
1 chopped onion
Salt to taste
Black pepper to taste
Seasoning for meat to taste
Ingredients for breading:
3 eggs
2 tablespoons of cornstarch
Breadcrumbs
Oil for frying
Preparation method:
Place the washed rice in a pan, add the hot water, salt, cover and cook over low heat.
After cooking, transfer to a bowl (or basin) and let cool a little.
Meanwhile, heat two tablespoons of oil in a frying pan, add the chopped onion and sauté until soft and translucent.
Add the ground beef and season with salt, black pepper and seasoning for meat to taste.
Cook over medium heat, stirring constantly to prevent it from sticking or burning to the bottom of the pan.
Add the melted butter and eggs and three eggs to the cooked rice.
Mix well until everything is well incorporated.
Line a dessert container (or small bowl) with plastic wrap, distribute the rice evenly, following the shape of the container.
Fill with one to two tablespoons of ground beef, wrap well and shape into a dumpling or similar to a coxinha.
Tip: you can simplify things by placing the rice on top of a piece of plastic wrap, stuffing it and closing it, shaping it into a dumpling.
In a bowl, beat 3 eggs and mix with the cornstarch until there are no lumps.
Dip the rice ball in the egg and cornstarch mixture, then coat the ball in breadcrumbs.
Fry in hot oil until golden brown, as if you were frying a coxinha.
Remove the fried balls and place them on a plate lined with paper towels to drain the excess oil.
