Ingredients:

1 cup pitted dates (soft and sticky ones work best)

1 cup roasted peanuts (unsalted preferred)

1 tablespoon cocoa powder (optional – for a chocolatey kick)

½ teaspoon cinnamon (optional – for warmth and flavor)

1 tablespoon coconut oil or natural peanut butter – helps bind and adds richness
Instructions:
Step 1: Prep the Dates
If your dates are dry or firm, soak them in warm water for 5–10 minutes, then drain well. This helps them blend smoothly.
Step 2: Blend It Up
Add the roasted peanuts to a food processor. Pulse a few times to break them down into coarse crumbs (or a fine meal, if you prefer a smoother texture).
Add the dates, coconut oil or peanut butter, and optional cocoa powder and cinnamon. Blend everything together until a sticky dough forms. Scrape down the sides as needed.
The mixture should hold together when you pinch it. If it’s too dry, add a tiny bit more coconut oil or a splash of warm water.
Step 3: Roll Into Bites
Scoop out portions and roll into small balls using your hands (about 1 inch each). You should get around 12–16 balls, depending on the size.
Step 4: Chill & Store
Place the bites in the fridge for at least 15–20 minutes to firm up. Store in an airtight container in the fridge for up to 2 weeks, or freeze for longer shelf life.
