Ingredients:

– 1 cup creamy peanut butter
– 1/2 cup unsalted butter, softened
– 2 cups powdered sugar
– 1 teaspoon vanilla extract
– 2 cups semi-sweet chocolate chips
– 2 tablespoons coconut oil or shortening
– Holiday sprinkles (optional)

Directions:

1. In a large mixing bowl, combine peanut butter, butter, powdered sugar, and vanilla extract. Mix until smooth and well combined.

2. Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Freeze for 20-30 minutes, or until firm.

3. Melt the chocolate chips and coconut oil in a microwave-safe bowl in 20-second intervals, stirring between each, until smooth.

4. Using a fork or toothpick, dip each peanut butter ball into the melted chocolate, ensuring it’s fully coated. Let excess chocolate drip off, then place the ball back on the parchment paper.

5. If desired, sprinkle with holiday-themed sprinkles before the chocolate sets.

6. Refrigerate the coated peanut butter balls until the chocolate is firm, about 30 minutes.

7. Store in an airtight container in the refrigerator for up to a week or freeze for longer storage.
