Ingredients
8 sheets of spring roll dough (or phyllo dough)
1 large carrot, shredded
1 cup finely chopped cabbage
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 small onion, chopped
2 cloves garlic, minced
2 tablespoons soy sauce
Oil for frying
Salt and pepper to taste
Instructions
In a large skillet, heat a little oil and sauté the onion and garlic until golden brown. Add carrot, cabbage and peppers and cook for about 5 minutes. Add soy sauce, salt and pepper and cook for another 2-3 minutes. Remove from heat and let cool.
Assemble the rolls: Place a sheet of dough on a clean surface. Place a portion of the vegetable mixture on one end of the sheet. Fold in the sides and roll tightly, sealing the edge with a little water.
Fry the buns: Heat enough oil in a large frying pan. Fry the rolls in batches, making sure they are golden and crispy, about 3-4 minutes on each side.
Serve: Remove the rolls and place on paper towels to drain off excess oil. Serve hot, with your choice of dipping sauce.
