Chicken With Ginger And Scallions
Ingredients:
1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
1 tablespoon cornstarch
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons vegetable oil
2 tablespoons ginger, minced
3 cloves garlic, minced
1/2 cup scallions, chopped
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon honey
Instructions:
In a bowl, combine the chicken, cornstarch, salt, and pepper.
Heat the oil in a large skillet or wok over medium-high heat.
Add the chicken and cook until browned on all sides.
Add the ginger and garlic and cook for 1 minute more.
Stir in the scallions, soy sauce, rice vinegar, and honey.
Cook until the sauce thickens and the chicken is cooked through, about 2-3 minutes more.
Serve over rice.
