Crisp, colorful, and full of creamy-sweet flavor, this cucumber salad is simple to prepare and deeply satisfying. The boiled eggs add protein, making it hearty enough to stand on its own or complement any main dish.

3 baby cucumbers, thinly sliced

1 small carrot, peeled and grated

1 tomato, diced (remove seeds if you want it less juicy)

1/4 small red onion, very thinly sliced

1 tablespoon vinegar (white wine, apple cider, or rice vinegar all work)

4 tablespoons mayonnaise

1 tablespoon honey

2 boiled eggs, chopped or sliced

1. Prep the vegetables:

Slice the baby cucumbers into thin rounds.

Grate the carrot using a coarse grater.

Dice the tomato, and optionally remove the seeds to reduce excess moisture.

Thinly slice the red onion β soak in cold water for 5β10 minutes if you want to mellow the sharpness.

2. Make the dressing:
In a small bowl, whisk together:
