Kentucky Butter Cake
Ingredients
1 cup softened butter
2 cups sugar
4 large eggs, room temperature
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk + butter sauce:
1 cup sugar
1/2 cup cubed butter
1/4 cup water
1-1/2 teaspoons vanilla extract
Directions
In a bowl, cream together batter and sugar until light and fluffy.
Add eggs one at a time, beating well after each option.
Beat in vanilla.
Combine flour, baking powder, baking soda and salt; add to cream mixture on the other side with buttermilk, beating well after each option.
Fill a greased and floured 10-inch baking dish.
Shape into a tube.
Bake at 350° until a toothpick inserted in the center reveals all, 55–70 minutes.
Let cool 10 minutes.
Run a spatula around the edges and center of the pan.
Rearrange cake on a wire rack over wax paper.
For sauce, combine sugar, batter, and water in a small saucepan.
Cook over medium heat until margarine is liquefied and sugar is broken up.
Remove from heat; stir in concentrates.
Poke holes in top of warm cake; pour 1/4 cup sauce over cake.
Let sit until sauce is absorbed.
