Ingredients:

500 g of English potatoes (small potatoes)
2 tablespoons of cornstarch (Maizena or another brand)
1 egg
Paprika to taste
Salt to taste
Black pepper to taste
Chopped parsley to taste
Enough breadcrumbs for breading

 

Preparation method

Peel the potatoes, cut into small pieces and cook until soft.

After cooking, drain the water and mash the potatoes well with a fork to form a puree.

Season with paprika, black pepper and salt to taste.

Add the cornstarch, chopped parsley and mix.

Knead a little with your hands until you get a firm and smooth dough, similar to bread.

Then shape it lengthwise, creating a triangular shaped dough.

If you can’t, you can make them in a cylindrical shape, the only difference is that the snacks will be round.

Then, cut them into not very thick slices – less than a finger thick.

In a bowl, add the egg, a pinch of salt, a pinch of paprika and beat with a fork or whisk.
