Ingredients:

2 medium zucchini
2 large potatoes
1 large onion, finely chopped
1 carrot, grated
A sprig of parsley, finely chopped
2 eggs
3 tablespoons breadcrumbs
1/2 cup mozzarella cheese, grated
Salt, to taste
Black pepper, to taste
Olive oil, for frying

Instructions:

Prepare the vegetables:
Grate the zucchini and potatoes. Place them in a colander, sprinkle with salt and let them sit for about 10 minutes. This process helps remove excess moisture.
Squeeze out the moisture from the grated zucchini and potatoes with your hands or a clean cloth.

Combine the ingredients:
In a large bowl, combine the grated zucchini, potatoes, chopped onion, grated carrot and chopped parsley.
Add eggs, breadcrumbs, mozzarella cheese, salt and black pepper. Mix thoroughly until well combined.

Forming the patties:
Heat olive oil in a large skillet over medium heat.
Shape the mixture into patties. Each patty should be about the size of a small hamburger.

Cooking:
Place the patties in the skillet and fry each side for about 4-5 minutes or until golden brown and crispy.
Make sure to cook them over medium heat to avoid burning the outside while ensuring the inside is cooked through.

Serving:
Serve the patties warm. They can be enjoyed on their own, or paired with sour cream or a light salad to complement the flavors.
