Ingredients:
1 pound shrimp, peeled and deveined
8 oz snow peas, trimmed and stringed
1 tablespoon oil
2 cloves garlic, minced
1 inch piece of ginger, peeled and minced
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon sesame oil
Salt and pepper to taste
Optional: sliced mushrooms, scallions for garnish
Instructions:
Marinate the shrimp: In a bowl, combine the shrimp with 1 tablespoon soy sauce, 1/2 teaspoon sesame oil, and a pinch of salt and pepper. Let it marinate for 15 minutes.
Prepare the vegetables: Trim the snow peas and remove the strings. If using mushrooms, slice them.
Stir-fry: Heat the oil in a wok or large skillet over high heat. Add the garlic and ginger and stir-fry for 30 seconds until fragrant.
Add the shrimp and cook for 2-3 minutes, or until they turn pink and opaque. Remove from the pan and set aside.
Add the snow peas and mushrooms (if using) to the wok and stir-fry for 2 minutes, or until tender-crisp.
Return the shrimp to the wok. Add the remaining soy sauce, oyster sauce, and sesame oil. Stir-fry for another minute to combine flavors.
Season with salt and pepper to taste. Garnish with scallions, if desired.
Serve hot with rice.
