Strawberries and Whipped Cream Log

Ingredients :

For the rolled biscuit :

4 eggs
100 g of sugar
100 g of flour
1 pinch of salt
For the garnish:
300 ml whole liquid cream (well cold)
50 g of icing sugar
1 teaspoon of vanilla extract
500 g of fresh strawberries

For decoration:

Fresh strawberries ( whole )
Whipped cream ( For the details )
Sugar decorations (flakes, pearls, etc.) )

Instructions:

Preparing the rolled biscuit:

Preheat the oven to 180°C.
Separate the egg whites from the egg yolks. Whip the yellows with sugar until it gets a foamy mixture.
Tuck in sieve flour delicately.
Top the snow whites with a pinch of salt, then gently incorporate them into the mixture.
Spread the batter on a baking sheet covered with sulfurized paper and bake for 10-12 minutes.
When coming out of the oven, roll the biscuit in a moist torch and let cool.

Preparing the whipped cream:

Whip the liquid cream well cold with icing sugar and vanilla until you get a firm whipped cream.

Assembling the log:

Gently roll up the biscuit and spread a generous layer of whipped cream.
Lay strawberry chunks all over the surface.
Roll up the biscuit tightly, then cover with whipped cream.

Holiday decorations:

Cut the strawberries to form little Santa hats and decorate with whipped cream tips.
Add flakes and sugar beads for a wintery effect.

Presentation:

Place the log on a serving tray and add some extra decorations to your liking.
Refrigerate at least 1 hour before serving.

Tip:
For perfect finishes, use a whipped cream pouch and create precise patterns.
