Required products:
For the marshmallows:
4 eggs
120 grams of sugar
100 grams of flour
2 tablespoons of cocoa powder
For the cream:
2 eggs
80 grams of sugar
20 grams of flour
240 milliliters of fresh cow’s milk
100 grams of butter, at room temperature
For the fruit filling:
200 grams of strawberries or other fruit
80 grams of sugar
30 grams of cornstarch
1-2 tablespoons of cold water
For the glaze:
80 grams of roasted peanuts
200 grams of chocolate
2 tablespoons of vegetable oil
Method of preparation:
Make the marshmallows by beating the eggs in a bowl until fluffy. Then pour in the sugar in portions and beat after each addition. After the last one, continue until white. Sift the flour and cocoa and add to the mixture. Stir with a spatula until combined. Do not use a mixer because you will lose the volume of the eggs.
Cover a rectangular baking dish with paper and pour the dough into it. Level and place in a preheated oven to 180 degrees. Bake for 13-15 minutes without a fan. Then remove and cool. Remove the paper and divide into 3 equal rectangles. Align them by cutting off their protruding ends. Do not throw away the trimmings, but save them, because they will go into the structure of the dessert.
Prepare the cream by beating the eggs together with the sugar in a bowl. Add the flour and mix. Pour in fresh milk and mix until you get a smooth mixture without lumps. If there are any, strain. Put on the stove and cook, stirring, until the cream thickens. Once this happens, remove and pour into a bowl. Cover with transparent foil and let it cool completely. Once this is done, remove the foil and mix for 1-2 minutes.
Pour the butter into a bowl and beat with a mixer until foamy. Then add the cream spoon by spoon. Stir after each addition, and after the last one beat until a homogeneous mixture is obtained. Fill the finished cream into a piping bag.
Pour the strawberries into a bowl, add the sugar and mix. Place on the stove and cook until the fruits soften. Beat the starch with a little cold water and add to the mixture. Cook until it thickens, beating all the time. Once this is done, remove and pour into a bowl. Cover with transparent foil and let it cool completely.
Take one rectangular cake and put some of the cream on it, forming a bed. Put the fruit filling in it and cover with pieces of the cuttings. Put cream on top of them and then use a spatula to form a triangle. Add the other two pieces of cake on the sides of the cream and press to stick. Cover with foil and put the dessert in the refrigerator for 2 hours to set.
Chop the peanuts with a sharp knife and pour into a bowl. Break the dark chocolate into pieces and place in a bowl. Melt in a water bath or microwave. Then add the oil and peanuts and mix.
Remove the dessert and place on a wire rack. Pour over the glaze and leave to cool to set. Then place in a serving dish and serve.
