Yum Yum Sauce

Yum Yum Sauce—also known as “white sauce” or “shrimp sauce”—is that addictive, creamy-sweet, lightly tangy condiment you’ve probably had drizzled over fried rice or grilled shrimp at your favorite Japanese steakhouse. It’s incredibly easy to make at home with simple pantry ingredients, and it tastes even better after a night in the fridge!

Ingredients:

Ingredient Amount
Mayonnaise 1 cup
Ketchup 1 tablespoon
Melted butter 1 tablespoon
Rice vinegar 1 tablespoon
Paprika ¼ teaspoon
Garlic powder ¾ teaspoon
Granulated sugar 1 tablespoon
Water 2 tablespoons (or as needed)
Hot sauce or cayenne A few dashes (optional)

Note: Use a good-quality, full-fat mayonnaise for best results. Japanese mayo (like Kewpie) will make the flavor even more authentic and luxurious.


Instructions:

Step 1: Mix the Base

In a medium-sized mixing bowl, combine the mayonnaise, ketchup, melted butter, rice vinegar, paprika, garlic powder, and sugar. Whisk until fully incorporated.

Step 2: Adjust Consistency

Gradually add the water, 1 tablespoon at a time, until you reach your desired consistency. The sauce should be smooth and pourable, but still thick enough to cling to grilled meats or vegetables.

If you’re using it as a drizzle, go thinner. As a spread or dip, keep it slightly thicker.

Step 3: Add Heat (Optional)

For a little kick, add a few dashes of hot sauce or a pinch of cayenne pepper. This gives the sauce more complexity and balances the sweetness.


Step 4: Chill and Let the Flavors Develop

Cover and refrigerate the sauce for at least 2 hours—but ideally overnight. This resting time allows the flavors to meld, soften, and deepen.


Step 5: Stir and Serve

Before serving, give the sauce a good stir to restore its creamy texture. You can store it in an airtight container in the refrigerator for up to 1 week.


Serving Ideas:

  • Hibachi-style dishes: Serve with grilled steak, chicken, shrimp, or veggies.

  • Fried rice & noodles: Drizzle over fried rice or lo mein for that signature hibachi taste.

  • Dipping sauce: Perfect for fries, chicken nuggets, or raw veggies.
